In the South of Italy, and in Sicily in particular, vegetables form a vital part of everybody's diet. This vegetarian and vegan sauce is naturally that way and is absolutely delicious. It is tomato based following a Sicilian recipe with red and yellow peppers, aubergine and a selection of herbs.
Ingredients: Pulp of tomato and sieved cherry tomatoes 69% (Italy), red and yellow pepper, onion, eggplant, extra virgin olive oil, garlic, sea salt, parsley, oregano, pepper, acidity regulator: citric acid.
